Delicious Avocado & Blueberry Popsicles for a Hot Day
These homemade avocado & blueberry popsicles are easy, refreshing, healthy and flavourful! Perfect for the warm summery weather we’ve been having in the past week! And hopefully there will be some more summer weather coming our way soon…
We’ve had such a cold spring this year, pretty depressing to be honest. But this last week we finally had some lovely summer weather with temperatures up to 28°C. And one of the things I can really enjoy when it’s warm weather is ice cream. Making good ice cream at home without an ice cream machine can be tricky but it’s pretty easy to make these avocado & blueberry popsicles and they can just as easily satisfy that ice cream itch.
Healthy Ingredients
I’ve been a bit on a blueberry binge lately. Until recently I wasn’t a huge fan of blueberries. I always felt they left a somewhat weird side taste when they’re in muffins and such. And I’ve always preferred raspberries. But I recently made the most amazing vegan blueberry cheesecake. The flavour was so good, but I still need to improve the recipe a bit before I can share it here with you (the filling was not setting properly, it was too soft). But anyway, since then I’ve been trying blueberries in other things like smoothies and oatmeal and I’m liking it!
So when I thought of making some popsicles of course I wanted to try some with blueberries! I also added some avocado for extra creaminess, lemon juice, coconut milk and little bit of honey. And I decorated them a bit with some chocolate, pistachios and lemon zest. And they are amazing!
Delicious Avocado & Blueberry Popsicles
Equipment
- popsicle mold (this could be silicone molds, glasses, plastic cups, …)
- popsicle sticks (wooden sticks or reusable plastic or metal ones, even teaspoons can work)
- blender
- freezer
Ingredients
Popsicles:
- 130 g blueberries (frozen or fresh)
- 130 g avocado
- ½ lemon, juiced
- ½ tsp honey (use maple or agave syrup for a vegan version)
- 200 ml coconut milk (the creamy kind to cook with, I like the Aroy-D brand but other brands are good too)
Decoration
- chocolate
- pistachios (crushed into small pieces)
- lemon zest
Instructions
Make the popsicles
- Place all popsicle ingredients in the blender and blend til you have a smooth creamy mixture.
- Pour the mixture into you molds & add the sticks.
- Place your molds in the freezer for at least 2 hrs.
Add the decoration
- When you're ready to eat your popsicles melt the chocolate first. My favourite way to melt chocolate is to just break it into small pieces in a bowl and to microwave it in small increments (20 seconds), stirring in between, till it's completely molten. You could also melt the chocolate au bain marie on the stove.
- Then have the other decoration ingredients ready – crushed pistachios, lemon zest or anything else you'd like to use
- Take the popsicles out of the freezer and out of the molds. You may have to wait a minute for the mold to warm up enough to release the popsicles.
- Drizzle some chocolate on the popsicles and right away sprinkle your pistachios and/or lemon zest on it cause the chocolate will set very fast on the cold popsicles and once it's set the nuts and zest will not stick so much anymore. You could also dip the popsicle partly or completely in the chocolate.
