Spring Salad with Lime & Mint Dressing

Just a quick and easy salad, perfect for lunch or as a side dish during dinner.

I love the colours of these fresh spring vegetables, they taste nice and crispy. And lime and mint is just such wonderful fresh zesty combo for the dressing, I mean you can never go wrong with lime and mint, whether it’s for a salad dressing, a drink or a dessert, it’s always going to be good!

You could really just use any combination of fresh spring veggies for this salas. I used arugula, sugar snap peas, zucchini and radishes. But you could also go for other types of green beans, asparagus, carrots and other types of lettuce, baby spinach or kale, …

Spring Salad with Lime Mint Dressing

Servings: 2 as a side dish

Ingredients

  • 1 Zucchini
  • 200 g Sugar Snap Peas (or other green beans or asparagus)
  • 50 g Arugula (oor other salad greens)
  • 1 bunch of Radishes
  • 1 handful of Mint leaves

For the Dressing:

  • 1 Lime
  • 2 tbsp Mint Leaves (chopped up)
  • 2 tbsp Olive Oil
  • 1,5 tsp Honey
  • ½ tsp Himalayan Salt
  • 1 pinch Black Pepper

Instructions

Make the dressing:

  • take the zest of 1 lime, the juice of 1 lime, add olive oil, mint leaves, honey, salt and pepper and blend well in a blender!

Cut and mix salad vegetables:

  • cut zucchini in thin ribbons, if your zucchini is freshly picked you can use it like that. Or you could blanch the ribbons for a minute or so and cool un der cold water
  • cut radishes julienne strips or any way you prefer
  • mix salad greens, sugar snap peas, zucchini ribbons, radishes and mint leaves
  • add the lime & mint dressing!
