Spring Salad with Lime Mint Dressing
Servings: 2 as a side dish
- 1 Zucchini
- 200 g Sugar Snap Peas (or other green beans or asparagus)
- 50 g Arugula (oor other salad greens)
- 1 bunch of Radishes
- 1 handful of Mint leaves
For the Dressing:
- 1 Lime
- 2 tbsp Mint Leaves (chopped up)
- 2 tbsp Olive Oil
- 1,5 tsp Honey
- ½ tsp Himalayan Salt
- 1 pinch Black Pepper
Make the dressing:
take the zest of 1 lime, the juice of 1 lime, add olive oil, mint leaves, honey, salt and pepper and blend well in a blender!
Cut and mix salad vegetables:
cut zucchini in thin ribbons, if your zucchini is freshly picked you can use it like that. Or you could blanch the ribbons for a minute or so and cool un der cold water
cut radishes julienne strips or any way you prefer
mix salad greens, sugar snap peas, zucchini ribbons, radishes and mint leaves
add the lime & mint dressing!
